Shrimp is a delicious and popular ingredient that many people love. In addition to tasty dishes made from shrimp such as fried shrimp, grilled shrimp with salt and chili, steamed beer shrimp, tamarind sautéed shrimp, and Chinese-style braised shrimp, you can also make shrimp and bean stew with this simple recipe.
1. Ingredients for shrimp and bean stew
– Fresh shrimp: 350 grams
– Fresh tofu: 3 sticks
– Vermicelli: 1 small bundle
– Shiitake mushrooms: 200 grams
– Eggs: 1
– Spring onions
– Seasonings: Cooking oil, salt, 1 tablespoon of cooking wine, 2 tablespoons of tomato sauce, 1 tablespoon of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar
2. How to make shrimp and bean stew
Step 1: Prepare the ingredients
– After buying fresh shrimp, remove the head, shells, and black veins along the back. Then wash them and marinate with a tablespoon of cooking wine and a little salt. Wait for a while, then remove and drain.
– Soak the vermicelli in warm water until soft.
– Cut the fresh tofu into medium-thick slices.
– Remove the stems of the shiitake mushrooms, wash them and let them drain.
– Remove any wilted or yellow leaves from the spring onions, wash them with clean water, and chop them.
Step 2: Prepare the sauce
– Take a large bowl and add the seasonings in the following proportions: 2 tablespoons of light soy sauce, 2 tablespoons of tomato sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of sugar, and 1 bowl of water.
– Mix the ingredients well with chopsticks or a spoon.
Step 3: Deep-fry the tofu
– Crack the egg into a small bowl, beat it well, then dip the tofu in. Gently flip the tofu to evenly coat it with the beaten egg.
– Place a pan on the stove, add a moderate amount of cooking oil, and heat it up. Then, one by one, gently fry the tofu over low heat. When the tofu turns golden on both sides, remove it onto a plate.
Step 4: Pan-fry the shrimp
– Continue using the same pan that was used to fry the tofu to pan-fry the shrimp.
– Cook the shrimp until they turn pink and are fully cooked, then turn off the heat and transfer the shrimp to a plate.
Step 5: Stew the shrimp with tofu
– To prevent the ingredients from sticking, you need to brush a thin layer of cooking oil at the bottom of the pot. Then, arrange the shiitake mushrooms and place the vermicelli on top.
– Arrange the fried tofu and shrimp in the pot, then pour in the sauce.
– Cover the pot and simmer over medium heat for about 10 minutes, until the ingredients in the pot simmer up and the sauce is slightly reduced.
– Sprinkle the chopped spring onions on top and turn off the heat.
Shrimp and bean stew not only has a unique cooking method but also has a very special taste. The combination of sweet and fragrant shrimp, fresh tofu, vermicelli, and shiitake mushrooms will give you a delicious and unique dish to treat your family.
3. Notes when making shrimp and bean stew
– Look for shiitake mushrooms that are fresh and white, not crushed, with intact stems. Avoid mushrooms with tiny yellow spots as they are a sign of bacterial infection.
